Method
Fully ripe grapes are hand harvested and undergo gentle, soft pressing to prevent the must from taking on this variety’s copper-toned pigments. Fermentation takes place at a controlled temperature of 62 - 64 °F. After initial racking, the wine rests on its lees to develop body and great balance.
Tasting Notes
Straw yellow color with ripe apple-led fruit aromas. Dynamic and energetic on the palate, it offers a fresh aromatic symphony with a savory tang. It features vivid acidity and a persistent, mineral-driven finish.
